  • 1 Barbecue Grill

Ingredients
  

  • 2 Racks pork ribs About 4 pounds total

Dry Rub

  • ½ cup Dark brown sugar 1/4 cup will be used in the apple cider mixture.
  • 4 teaspoons Garlic salt
  • 4 teaspoons Pure ancho chile powder
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • ½ teaspoon Celery salt
  • ¼ teaspoon Cayenne pepper
  • ¼ teaspoon Cinnamon
  • ¼ teaspoon Freshly ground white pepper

Apple Cider Mixture

  • ½ cup Apple cider Non alcoholic version
  • ¼ cup Apple jelly Melted
  • ¼ cup Honey

Other

  • 1 cup Prepared barbecue sauce
  • 1 Apple Peeled, corded and cut into small cubes

Instructions
 

Dry Rub Spice Mix:

  • In a bowl, scoop a 1/4 cup of the dark brown sugar and mix with the garlic salt, chile powder, salt, black pepper, celery salt, cayenne, cinnamon and white pepper.

Cider Mixture:

  • Transfer 1 tablespoon of the spice mix to a medium bowl and whisk in the cider, apple jelly, honey and the remaining 1/4 cup of sugar.

Rib Preparation:

  • Pull the membrane off the underside of each rib rack using a towel to grasp the corner.

Putting It All Together

  • Place wire trivet rack in the bottom of the instant pot.
  • Transfer the seasoned pork ribs upright, with the meat side facing out.
  • If you’re using one large rack of ribs, then circle them around the pot.
  • Add Apple cider mixture to the bottom of the pot.
  • Secure lid and close vent.
  • Press “manual” or “pressure cook” and cook on high pressure for 16 minutes.
  • When the timer beeps, allow the pressure to naturally release for 15 min, then turn the valve to quick release.

Amping Up The Barbecue Sauce

  • Add apple cubes into med size cooking pot and add 3 – 4 tablespoons of the cooked cider mixture from the instant pot. Cook down the apples until the apple cubes are soft but still hold its form. About 8 – 10 mins pending on how small the cubes of apples are.
  • *Add prepared barbecue sauce into to apple cube cider mixture. Cook down on medium heat until it's a nice and thick.

Grill Time:

  • Light a grill. Place the ribs on the grill and brush with the barbecue sauce; grill over moderate heat, turning and brushing, until glazed, 15 minutes. Let rest for 10 minutes, then cut between the bones and serve.

* Determining the thickness of barbecue sauce is often a matter of personal preference, but here are some general guidelines to help you gauge whether your barbecue sauce has reached the desired thickness:
  1. A thicker sauce will coat the back of a spoon more visibly, and when you run your finger through the sauce on the spoon, it should leave a distinct trail.
  2. When you brush a thin sample of the sauce on the ribs as it cooks, the sauce should cling to the meat rather than sliding off excessively.
