Classic Shortbread Cookies

Simple, sweet, and irresistibly delicious, shortbread cookies are a classic treat enjoyed by all. Ingredients
  

  • 1 roll/disk Shortbread Cookie Dough (room temperature) Recipe for butter cookie dough was shared above.
  • 1/2 cup Powder sugar Optional

Instructions
 

  • Roll and divide shortbread cookie dough into equal size ball or cut into small to mid size disk.
    For added fun, roll the cookie dough flat with rolling pin and cut dough with cookie cutter for fun shapes.
    Cookie thickness should be no thicker than 1/4 inch thick.
  • Place prepared cookie dough on parchment prepared baking sheets and place in refrigerator for 10 – 20 minutes to allow the butter to firm up.
    TIP: When the cookie dough has time to firm up in the fridge, the cookie bakes evenly, reduce browning around the cookie edges.
  • Pre shaped shortbread cookie dough can be made ahead of time and refrigerated until ready for baking.
  • Preheat oven to 350ºF.
  • Bake for 8 – 12 minutes until firm and just beginning to turn golden.
    Keep a close eye on them, as baking times can vary based on the size of the cookies and your oven's characteristics.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, you can sift some powder sugar over top for added visual appeal and hint of powdery sweetness.

Notes

  • For smaller cookies, reduce the baking time, and for larger ones, cookies might need a bit more time.
  • Cookies are usually done when the edges are lightly golden. The centers may appear slightly undercooked but will firm up as they cool.
